Famous Jacob's Salsa


Just a warning you want to make lots and lots of this once you try it! It goes fast!


Ingredients:

1 Medium white onoin (choose a flat shaped one so it is sweeter)

1/4 C lime juice

1 1/2 pounds of medium diced, seeded roma tomatoes.

1 small jalapeno pepper, halved and seeded

3 T fresh cilantro

2 garlic cloves

Salt and black pepper to taste.


Directions:

1. Peel the onion and quarter it, prepare the jalapeno pepper, peel the garlic clove, cut in half. Put the onion, jalapeno pepper, garlic clove and lime juice in a blender or food processor. Process until very small. Set this mixture aside for at least 10 minutes.

2. Wash your tomatoes. Cut off the tops and seed the tomatoes, set in a bowl. Throw seeds and tops away. When your done seeding dice the tomatoes to a medium dice. Add the diced tomatoes to a large bowl, along with any juices that accumulated in the bowl.

3. Wash and chop the cilantro. Transfer to the bowl with tomatoes. Add the onion mixture to the tomatoes, season with salt and pepper. Toss to combine.
